There are different opinions on what well-being is and what it is healthy.

For us the main contributor to health is food. Good food means good health.

Eating well has also different meanings to different people. In our opinion, it doesn’t necessarily mean avoiding certain kinds of food like pasta or meat. Good food is genuine, artisanal, with no artificial ingredients. Eating well to us is varying the good food you eat everyday.

The key here though is finding the good food. There is the place in Glasgow where you will find the good food everyday, and everyday different and varied, not only in terms of nutrient but also cuisine. East meets West in ETC. One day lunch special could be Italian meatball panini, the next day an authentic Thai dish.

Are you drinking coffee that is “TOO FRESH”?

There seems to be a urge now to get the freshest coffee, and a general belief that coffee roasted in the UK is going to be fresher than coffee roasted abroad.

 

Truth is that coffee beans need to rest for a few days after being roasted. The number of days will change depending on a number of factors, but at least 2-3 days are a must.

Espresso roasts then tends to need a few more days to develop aromas at their best.

Grinding coffee beans straight after roasting is a no-no. Besides the fact that they are soft so not the best to grind, beans need to release CO2, which gives coffee a very acidic taste.

That is why coffee should be packed in bag with one-way valve, to let Carbon Dioxide escape. Exactly like the ones we supply.

 

Maybe next time you taste coffee that is rather acidic, ask yourself if you are drinking coffee that is “too fresh”.

Of course, storage is also a very important factor. If stored correctly coffee beans will retain aromas for a good amount of time.

We hear that some people in the UK store their coffee in the fridge, thinking it will maintain it fresh for longer. That is the worst place you could store your coffee in! Humidity and changes in temperature allows condensation to develop, which in turn deteriorates coffee, spoiling the taste. Not only that, coffee will absorb all the smells coming from the rest of the food in your fridge. Coffee in fact works as a deodoriser (You can have a nice wee pack of ground coffee in your car!).

Can you imagine drinking coffee that actually tastes of blue cheese or seafood???

 

These are just a couple of guidelines to ensuring you have the best cup of coffee.

If having coffee with milk, follow the milk temperature rule. Over 70 degrees centigrade milk proteins coagulate, making the milk taste sour and burnt. The ideal temperature is 55-60 degrees. The combination of acidic coffee and sour milk is tragedy. Next time you order a cappuccino (ideally 25ml of coffee, 100ml of steamed milk), remember the 60 degrees rule. Taste the difference, taste the coffee! (Hopefully one that is not too fresh).

To celebrate this great day we thought we would share a story with you. Of course it involves our beloved coffee roaster!

Caffé del Doge is unique in the world, and we owe this to their inherited secrets of Venetian Roasting tradition, the oldest and most refined coffee roasting method in Italy .

Italian coffee is renowned to be heavily roasted, but funny enough, when everything started in Venice back in the 1700 (The Doge was the lord of Venice at the times of Maritime Republics, and Venice was the first city to import and enjoy coffee beans from the East), Venetian coffee was not a dark roast. Caffé del Doge still roasts its beans using the same method and the secrets that have been developed to produce such aromatic blends without any bitter tones.

Caffé del Doge stands to Coffee as Scotland stands to Scotch Whiskey. Why getting anything else?

In this extract taken by Caffé del Doge’s own promotional material there’s an interesting description of the Venetian Coffee story:

“In a speech given to the Senate of the Venetian Republic in 1585, G.F. Morosini stated the following: ‘…they amuse themselves by sitting both inside and out on the street, people from all classes, drinking a black liquid, scorching hot, derived from a seed called kavèe, which they say has the power to keep a man awake.’ From then on coffee quickly became a popular and diffused beverage, and finally in 1683 the first ‘coffee bar’ was born in Piazza San marco. ‘

This is the embodiment of Venetian culture which has spread worldwide… Caffé del Doge was founded on this deep rooted history…”

The festival has been organised by Chris Brown. We think he couldn’t have thought of a better combination of winning forces.

COFFEE The interest in coffee in all its aromas is growing at a great rate in the UK. People are not just looking for a generic cup of coffee anymore, they want to know where it comes from, taste it accurately, try different tastes and know more about how it’s done. It’s the perfect moment for an event like this one.

SCOTLAND Aye! This is the Scottish Coffee Festival.

GLASGOW We think like Chris that in all Scotland Glasgow is the perfect place for a Coffee Festival. That’s where we concentrate our business and where people are more receptive to events, big coffee scene, exciting and energetic.

CHARITY What’s best than having a great time and doing good at the same time? And having a great time for a good cause while tasting coffee? Tickets are only £8 for a whole day filled with entertainment, specialty coffee and even more to eat and drink.

Our roaster Caffe’ del Doge has been member of the Cup of Excellence since 2004. The Cup of excellence is a yearly competition where select cuppers choose the best coffee beans. Bernardo at Caffe’ del Doge purchases winning beans every year, and winning farmers are greatly supported.

BREWERY Informal but such cool places breweries are! and Drygate Brewery is very very cool.

We met Chris last night and he’s been great, we are sure it will be a success. Thanks Chris!
